Sweet Shrimp and Red Pepper Stir Fry
Stir fry:
- 1 pound shrimp, peeled and washed
- 1/2 red bell pepper, sliced
- 1/2 tablespoon pineapple vinegar
- 1/4 cup sliced sweet onion
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 teaspoon dill
Salad:
- 4 cups coleslaw mix
- 4 cups chopped romaine
- 1 cup chopped purple cabbage
- 1/2 cup cherry tomatoes, sliced
- 1/2 cup sliced and halved cucumbers
- 1/4 cup chopped purple onion
- 2 tablespoons lemon juice
- 1 tablespoon pineapple vinegar
- 1 tablespoons soy-based or fat-free mayo
Assemble the salad. Then in a medium skillet sauté the shrimp, red bell pepper and onions. Let the shrimp brown, then add 1/2 tablespoon of pineapple vinegar to the pan. Season with dill, garlic and onion. Cover and simmer one minute. Pour the shrimp mixture over the salad. Serves four.

Vegan Banana Strawberry Oatmeal Squares
They’re om-nom-nom-tastic. And super healthy too! Makes 8 squares at 70 calories each.
Ingredients
1 banana, mashed
1/3 cup unsweetened apple sauce
1 1/4 cup oats (I used Quaker Quick Oats)
2 large strawberries, diced (you can also substitute for raspberries, blueberries, peaches, etc.)
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1 dash cinnamon
1/4 teaspoon vanilla extract
1 tablespoon white sugar (optional)Directions
1. In a medium sized bowl, blend banana, applesauce, and vanilla extract.
2. In another larger bowl, mix oatmeal, baking powder, baking soda, and cinnamon.
3. Slowly add the banana mixture into the oatmeal mixture. Add the diced strawberries (make sure they’re fairly small pieces!)
4. Scoop mixture into a 6 by 9 inch baking pan.
5. Optional step: Sprinkle sugar on top of the mixture.
6. Bake for 45 minutes at 350 degrees F. They’re ready when they turn golden brown and no residue comes up when you poke them with a fork.
7. Let them cool for 20 minutes before cutting them up into squares.
8. ANNNND EAT!

I weighed myself today, I’m back up to 170lb, not great but not that bad considering I’ve only been to the gym a handful of times since mid-March and have completely gone of my healthy eating plan. Also went to my first Pilates class in over two months too and it was hell but it’s really motivated to get back in to my gym regime again, before my hiatus I was doing:
5x 1 hour cardio
1x 40min strength training
1x 1 hour Pilates
1x 1 hour BodyPump
and was loving it and I know I can back to that again
Weight: 77.1kg/ 170lb -+6lb :-/
I’ve found it. My dream body.

She’s one amazing lady, my PE teacher and her were friends so she used to come and help us train every once in a while, pretty cool.
And did you know she’s allergic to sand so every time she does a long jump she has a reaction yet she’s managed to make it to the Olympics with her condition. That’s what I call dedication.
